Are you feeling grouchy?

Did you know that if you are you feeling achy, grouchy or frustrated your liver could be congested? Who knew? Well, Chinese medicine does. According to this holistic system, the liver is said to GREATLY influence your mood, emotions, eyes, tendon/ligaments and digestion. A stagnate liver can mean a slowed metabolism which contributes to being overweight.

That is not a good combination. Feeling angry, frustrated, stuck AND overweight. WATCH OUT!

Here is a recipe to help get you “un-stuck” physically and/or emotionally. I adapted this recipe from Andrea Beaman, another course I am taking ( I love the learning 🙂 ). This recipe includes foods that will help to flush your digestive system (no, you will not be running to the bathroom). Flush in a good way. Sour flavors govern the liver and bitter combined with sour acts to break down the stagnant material in your liver and gallbladder.

DANDELION SALAD WITH FENNEL, APPLE AND TOASTED SESAME SEEDS

  • Small fennel bulb, sliced thin
  • 1 green apple (green contain pectin, is fibrous and is sour) cut up into small pieces
  • 1 cup of dandelion leaves, sliced thin
  • 2-3 tbsp. lemon juice
  • 1-2 tsp. honey
  • ¼ cup extra virgin olive oil
  • Sea salt and black pepper
  • 2 tbsp. of sesame seeds toasted
  • topped with sprouts of your choice (optional)

Place fennel, dandelion, and apple into a glass bowl. Combine lemon, salt/pepper, olive oil and honey and whisk until well blended. Toss dressing with salad and allow to marinate for 5-10 minutes. Top with the toasted seeds and sprouts and ENJOY.

TIPS

  • Remove the inner core (heart) from the fennel as it is too fibrous
  • Use local honey . This is like an “immune shot” and helps address environmental pollen and allergies in your local area.
  • Make sure you marinate for 5-10 minutes as this helps to break down the bitter taste of the dandelion.
  • The recipe called for milk thistle seeds but any seeds will be good. FYI if you can get them, milk thistle seeds are shown to support the growth of new liver cells.
